Apple, Feta, & Sausage Stuffed Mushrooms

Previously, I had experimented with this recipe and decided to change it around a little this time.
Ingredients:
  • 6-8 Crimini mushrooms
  • 1 peeled & diced apple
  • 1/4 cup feta cheese
  • 2 tablespoons of olive oil and then some in a small dish for coating the mushrooms
  • 1 Adell’s Chicken & Apple precooked sausage
  • Salt
Directions:
  1. Clean and stem your mushrooms but save the stems for the stuffing!
  2. Cut the sausage into slices and add to the food processor.
  3. Add mushroom stems, 2 tablespoons olive oil, apple, and feta into the food processor.
  4. Process until all ingredients are finely chopped and incorporated. Add a little more olive oil to the mixture if you find it too dry.  You want something that stays together well without being too moist.  Set aside.
  5. Slather each mushroom top with olive oil to allow for a nice presentation (and flavor) when cooked.
  6. Lightly sprinkle salt inside each mushroom cap.
  7. Add caps to a baking sheet.
  8. Take a fork and gently press a small amount of stuffing inside the mushroom cap, enough to fill it generously.  Repeat for all caps.
  9. Then create equal size balls of stuffing for each of your mushrooms.  We are going to create large mounds of stuffing atop the mushroom which is why the stuffing can’t be too dry (or it will crumble) or too wet (it will slide off your cap).  Add a ball of stuffing to each cap, pressing gently to create a mound the width of the cap but not over the edges.
  10. Then BROIL your stuffed mushrooms for 15 minutes or until they start to brown/crust at the top.
  11. Allow to cool and enjoy!

Baked Avocado & Eggs in a Creamy Lemon Sauce

Baked AvocadoIngredients:

  • 1 avocado cut in half with the pit removed
  • 2 eggs (per avocado if you’re making more than one)
  • Sauce:
    • 1 fresh lemon
    • 2 tablespoons butter or margarine
    • minced garlic
    • 1 tsp pepper
    • corn starch
    • Feta cheese (optional)

Directions:

Pre-heat the oven to 350 degrees.  Place the avocado halves in a muffin pan or a small stoneware that will keep the halves from tipping.  Though you can use the entire egg by removing some of the avocado, I prefer to separate the yolks and add them to the area where the pit was in the avocado (I save the whites for tomorrow morning’s breakfast).  If I have any room, I’ll add a bit of the whites over the top.

Bake avocados & eggs for 15 minutes or until the eggs are how you like them (I like mine over medium so I put them in for 25 minutes.

While that’s baking, zest the lemon and squeeze the juice into a small dish.  Because the amount of sauce is so small, I make it in the toaster oven but you can microwave it.  Add butter/margarine, garlic, and pepper to the dish and heat until thoroughly melted, mixing occasionally.  Once it’s completely melted whisk the cornstarch (or arrowroot) into the mixture until desired thickness (generally about a tablespoon).

Add avocado halves to your plate and allow to cool (picture shows them with sauce & feta but we actually prefer to eat it on the toast as follows).  Run a spoon along the avocado skin once it’s cool enough to handle and use a fork to mush the egg & avocado; scoop out of skin and spread it on the toast.  Drizzle the entire thing with the lemon sauce and crumble feta over it.  Amazing!

Brussel Sprout Coleslaw

Another “made on the fly” dish of mine so portions are not exact.

Ingredients

  • 1 lb. brussel sprouts
  • 2 Tbsp apple cider vinegar
  • 1/4 cup sour cream
  • 2 Tbsp Dijon mustard
  • 1/4 cup mayonnaise
  • 3 Tbsp olive oil
  • 2 Tbsp maple syrup
  • 2-3 carrots topped and peeled (optional)
  • apple – cored and sliced (optional)
  • salt to taste

Directions

  1. Toss everything but the apple into the food processor and hit the “chop” button!
  2. Slap a portion on a dish, sprinkle with salt and/or pepper, dress with apple slices and enjoy!

Lemon Pepper Tofu with Avocado Yogurt Sauce

Lemon Pepper Tofu with Avocado Yogurt Sauce

Ingredients

  • 1 block of firm tofu
  • 1 large avocado
  • 1 spring onion
  • Lemon Pepper seasoning or lemon zest with black pepper
  • Olive oil
  • .5 Tbsp minced garlic
  • 1 cup plain yogurt
  • 1 tsp celery salt

Directions

  1. Press, drain and pat tofu dry.
  2. Cut into 1 inch wide by half inch thick strips.
  3. Lightly coat with olive oil.
  4. Sprinkle with lemon pepper seasoning.
  5. Grill or place in toaster oven on broil, until golden brown on top.
  6. Peel and pit avocado.
  7. Add avocado, garlic, celery salt, and yogurt to a food processor and mix till creamy.
  8. Add thinly sliced white portion of spring onion and mix.
  9. Add sauce next to tofu strips and enjoy!

Maple Fennel Salmon

Maple Fennel SalmonIngredients:

  • 1.5 lbs Sockeye Salmon
  • Torn mixed greens
  • 1 cup Jasmine rice
  • 1 Tbsp Butter/margarine
  • 3 Tbsp Safflower Oil* (adjust according to taste, I like a light oil so I use it sparingly)
  • 1 Blood Orange
  • 1 Tbsp Fennel seeds
  • .25 cup Maple Syrup
  • 2 Tbsps lemon juice

Directions:

  1. Cook Jasmine rice according to directions and set aside.
  2. On low heat**, add butter, oil, fennel seeds, lemon juice, & syrup to a skillet.
  3. Add salmon once oil mixture is hot.
  4. Add half of the blood orange.
  5. Flip salmon often to ensure even coating while cooking or break it up as shown in image.
  6. Cook thoroughly.
  7. Once the salmon has finished cooking, add the remaining half of the blood orange and stir.
  8. Let fish cool slightly before adding over torn mixed greens so not to cook/scorch them.

*Grapeseed or any other light flavored oil would do

**If you like a crisped skin to the fish, turn the heat to medium and allow the oil mixture to become quite hot before adding the salmon skin first.  Let it crisp/slightly brown before lowering the temperature and continuing to cook the salmon.

 

Summer Casserole

Ingredients

  • 8.5 oz. Cornbread/muffin mix (boxed or your own blend)
  • 2 eggs
  • 1 cup chopped fennel bulb (or 1 chopped onion)
  • Shredded cheddar & monterey jack cheese mix for topping
  • 1/2 cup Bisquick
  • 4 cups shredded zucchini
  • 1 cup shiitake mushrooms de-stemmed and sliced (save the stems for soup stock)
  • 1 cup seitan (I use my homemade beef flavored seitan) or browned beef

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Use butter or vegetable oil to grease a 2 quart casserole dish.
  3. In a large bowl thoroughly incorporate dry ingredients and eggs.
  4. Add all other ingredient (except the cheese topping).
  5. Spread this mixture into the casserole dish; top with cheese.
  6. Bake in a preheated oven for 60 minutes.

Eggplant Jerky

I don’t really care for the texture of cooked eggplant so I was looking for a different way to make it when I came across several recipes for “vegan bacon”. As I don’t eat bacon, I can’t tell you if this tastes like it but I can, however, tell you eggplant jerky is quite crispy and delicious! The portions herein are so you you can make as much or little as needed as eggplants come in all sorts of sizes and what’s “medium” to me may not be medium to you.

Ingredients:

  • 2 parts Teriyaki sauce (I highly recommend SoyVey brand teriyaki sauce and is what I used)
  • 1 part Maple syrup (agave or molasses is a good substitute but you’ll need to adjust the portions to your liking)
  • Option: Liquid smoke

Directions:

  1. Slice your eggplant fairly thin (mine was nearly paper thin and worked perfectly)
  2. Mix the ingredients in portions enough to coat your eggplant slices.
  3. Let slices marinate for a minimum of twenty minutes.
  4. Lay down parchment or wax paper on your work area and place your dehydrator tray on top of it (this is to catch any drippings).
  5. Cover the bottom tray of your dehydrator in parchment paper (also to catch any drippings while dehydrating).
  6. Lay out the eggplant on the trays close together but not touching.
  7. Dehydrate at 115°F for 12 to 18 hours or until crispy.
  8. Store strips in an airtight container or plastic bag. Place a paper towel under or around strips to absorb any excess oil.
